Exciting news! The hard copy of the Posit Science Thinkfood Cookbook arrived in my mailbox yesterday.
I am incredibly honored to be among the folks in this book. Some of my favorite bloggers and photographers are featured, and it really hit me as I was thumbing through and saw all the familiar faces. Such a wonderful collaboration on brain food!
I have one hardcopy of the cookbook to giveaway to one lucky reader so that you can enjoy it as well!

I love butternut squash pretty much any way, but I think my favorite is roasted in the oven with onions and spices, then paired with black beans for tacos. Last winter I ate these for lunch every day for a week!
I think my favorite would have to be dark chocolate…. I love to make bark with different combinations of dried fruits and nuts!

What a gorgeous book, congrats! We love to eat avocados – in all different ways, guacamole or to top quesadillas or in smoothies!

I love blueberries, especially in oatmeal or yogurt or oatgurt :-).
As much as I love pretty much all the foods on that list, I’ll have to be honest and say dark chocolate is my favourite. How could it not be?! And there are so many ways I love to eat it – in oats, in a smoothie, in desserts…it’s endless. I think my fave would have to be in combination with peanut butter. You cannot go wrong with chocolate and peanut butter.

My all time favorite has to be dark chocolate and my favorite way to consume it is melted on good baguette bread with olive oil and sea salt. I make a delicious Almond Chicken stir fry. I steam chopped celery. Then heat up sliced mushrooms. Next, I heat 2 tablespoons olive oil, and add cubed chicken, and cook. I add some garlic, the celery, the mushrooms, 3/4 cup frozen peas, all into the wok. I add the sauce next: 1/4 cup soy sauce, 1/2 cup water, and 3 teaspoons cornstarch dissolved. Then, just stir fry and heat. If you want some crunch, add a can of water chestnuts. Serve over Basmati Rice.

I love tomatoes and my favorite way to eat them is in the summer in an heirloom tomato salad. Congrats on being included in the cookbook. It sounds like a great one that I’d enjoy adding to my collection and cooking from.

As to brain food, wow – I eat a lot of the foods you likes, I love stuffed artichokes, butternut squash with pesto is a favorite in our household. Dark chocolate with a sip of port (not sure about the second part) is required when reading food blogs, I could go on.
Congrats on being featured in the book! My favorite brain boosting food outside of turmeric are sardines.

Peanut butter cookies. And what’s strange about this is I have a feeding tube and am not supposed to be able to eat. Now it’s taken me quite awhile just to be able to eat 1 cookie. I like the peanut butter the best and people don’t realize, but the flavor of what you eat can last all day. I’d rather have that flavor all day.
My favorite brain food is definitely avocado. I don’t have a particularly fancy recipe because I can never resist eating them just sliced up with a little kosher salt sprinkled on top. Sometimes I buy an avocado and think about trying one of the chocolate-avocado-pudding recipes I’ve seen, and then I decide I just love the plain avocado flavor too much!
Blueberries!! I like to throw a handful of fresh blueberries into my oatmeal in the morning.
