Funny you should bring up the What is Wellness idea…I’m reading a book called Food and Healing by Annemarie Colbin and she defines good health as: No fatigue, Good appetite, good sleep, good memory, good humor, precision in thought and action, taking responsibility, making choices, honesty, gratitude, humility and love.
I find it does me a world of good to get away from technology in general sometimes. The pressure to respond to emails, text messages, random phone calls, Skype requests, and also blog on a regular basis, can really be sapping sometimes. Squash, reading, and cooking sound like excellent ways to recharge! And, of course, a pint or two of Guinness, as in your photos, helps immeasurably…

cathy – My discovery of Colcannon was interesting. I had it as a side in Dublin w/o knowing what it was. Then saw it on a menu at an Irish rest. back home, ordered it and realized that is what I had. I love it, but nothing can beat what I had in Ireland. 🙂
