I have a quick one for you this time around. I threw these easy sauteed greens together just a few weeks ago and it has been my go-to side ever since. I’ve been eating it with veggie burgers at dinner and with eggs for breakfast.
It’s a super simple combination of leafy greens with a few toppers to enhance the flavors and make them more delicious.
I use bagged Power Greens that we can get at our Costco here. It’s a mix of baby kale, chard, and spinach. You can use any mix that you’d like. I’d suggest mixing a hearty green and a softer green like kale and spinach, versus using all spinach. I like the combination of textures that the different wilting times create.
For the fruit-flavored vinegar, any will do. I use a fruit and pepper vinegar that I bought at a winery. A pecan vinegar would work, too. You can purchase these kinds of vinegars at specialty food shops or online.
Then it all gets a sprinkle of shaved parmesan along with a dash of Everything seasoning. If you aren’t familiar with it, it’s the seasoning mix used to top everything bagels and I tend to eat it on EVERYTHING. Trader Joe’s sells their own mix in the spice section, but plenty of people have ventured out to make their own recipes.
This side dish is ready in roughly 5 minutes. So easy to make and I haven’t found anything that it won’t pair well with yet!
Easy Sautéed Greens
Serves about 2, but I’ve been known to eat it all in one sitting
Ingredients
2 tablespoons extra virgin olive oil
6 cups mixed baby greens such as kale, chard, and spinach
1 teaspoon fruit or nut flavored vinegar
Pinch of fine sea salt and ground black pepper
2 tablespoons shaved Parmesan
1 teaspoon Everything seasoning
Preparation
Heat the oil in a large skillet over medium heat. Add the greens, toss in the oil for 1 minute, until some wilt and some are still leafy. Remove from the heat.
Stir in the vinegar, salt, and pepper. Sprinkle with the Parmesan and Everything seasoning and serve warm.
