1/4 cup fubá flour (corn meal or corn flour works as well)

Ria – Thanks! Actually peaches aren’t that common here either. There are some imported ones at our Japanese market. If I hadn’t had the canned I probably would have used a different fruit.

Haha. It’s funny the way you describe the holiday boxes… 🙂 Anyway, it’s traditional to make farofa with canned fruit (such as the peaches and prunes you got) as a side dish to the turkey in Christmas in Brazil. So THAT’S why you got those!! hahahha! the galette looks tasty!
Oh, and the lentils are for good luck on new year’s… You’re supposed to eat them to have an abundant year! Guess the box had more surprises than you’d expect, huh???? hahahah!

I also love the galette idea. We made a spelt one in clalss that’s really good and a nice break from whole wheat flour so I might have to adapt this filling to that.

Amy – I’m really excited to get back to having access to different flours. Around here the variety is rare, pretty much all wheat with some corn and tapioca. We used to make a spelt bread at the bakery where I worked and it was a nice variation.

What a delicious-looking galette! I love peaches but have not yet made anything with them yet this year (my MIL & I put together a crockpot peach cobbler but we also used canned fruit!) Your substitutions sound great – I look forward to reading more about fubá flour.
