Thanksgiving Cooking for Two: Beer Basted Turkey and Olive Pecan Sourdough Stuffing

My husband and I often celebrate Thanksgiving by ourselves a few days before we join our families for the big meal. This year I decided to share some recipes for those who might also be doing some Thanksgiving cooking for two. This is the first post in the series. I’ll be the first to admit that Thanksgiving isn’t my favorite holiday of the season. It doesn’t make much sense, though. I love fall and pumpkins and I love to cook. Seems like I’d be all over a holiday that has those things well covered. 

I can offer no explanation other than my fondness of a winter wonderland, warm cocktails, cookies and cheesy Christmas movies. It simply beats out Thanksgiving every time. 

Despite it not being my favorite, I still like to cook and I like to get creative. We typically travel to the homes of our families for Thanksgiving dinners. (Yes, dinners. As in two in one day.) There, the family has traditional covered. But it rarely satisfies my need to try some new and creative.

I’m a fan of seasonal eating. I like asparagus in the spring, berries in the summer and apples in fall. You get the idea. 

I always associate seasonal with fresh foods until the holidays come along. When we start creeping up to Thanksgiving and especially when December hits, it’s 100 percent cookie season! Sure I’ll throw some kale and sweet potatoes into my meals for good measure, but cookies and baking take center stage. 

Every year it’s a battle between making old favorites or experimenting with new recipes. When you throw an outstanding new cookbook into the mix, the old favorites start to take the back seat.

The idea of snacks for Thanksgiving day seems a little absurd. It’s not like we really need to include more food in the celebration. And having snacks around certainly isn’t because we need to satisfy hunger. If you are like me, hungry won’t even be a part of your vocabulary for at least 36 hours. 

Yet there is something about little bites to kick off the celebration that feels like a necessity. All that cooking makes you want to eat. Why not take things over the top? It is Thanksgiving after all.

Every year, I go to the grocery store mid-October and ask if they have fresh cranberries. Every year the hard working person in the produce section tells me that they don’t come in until mid-November. So last week my expectations were low, but I had my eye out anyway.

When I turned to find a pile of bags front and center in the lettuce row, I’m certain my cheer carried itself to the freezer section across the store. 

Rumor has it the season arrived earlier this year. As a result, it will end earlier to. So stock up. I’ve already started.

Roasted Butternut Squash with Pear and Red Walnuts Recipe | Fake Food Free
This butternut squash dish is not sweet. I repeat, this dish is not sweet.

If you are like me, no matter how many versions of winter squash you’ve made or been exposed to, your brain still thinks of nutmeg, cinnamon and maybe even maple, when you envision the rich, orange, tender squash.

Okay, I’ll admit that this does contain cinnamon. But cinnamon is one of those interesting spices that can swing sweet or savory. It this case, it’s savory. 

The secret to this recipe is some heat. You don’t have to burn your mouth off, but use at least a medium spicy chili powder. I could even see a chipotle chili powder working. When you use these deeply flavored spices you get a beautiful balance of slightly sweet squash, with earthy pear, a bit of heat and crunchy walnuts.

On the business side of things, I’ve started working with so many new companies and organizations this year. It’s been enjoyable, challenging, and I like to think it has helped me grow quite a bit.

Growing up, marshmallows were the underdog in a box of mixed chocolates. They ranked just one level above that strange fruity nougat. Marshmallows covered in chocolate weren’t so disappointing to cause one to return a half eaten selection to the box, but they evoked a sigh and thoughts of something more glamorous like a caramel or toffee.

Things changed when homemade marshmallows gained popularity. That’s probably because they are ten times better than any marshmallow I’ve had from a chocolate box or a bag from the store. They are every bit as glamorous as caramel and toffee.

As I stand in the town center of Krakow, I wonder why a visit to Poland had not been higher on my travel list. It was always there, but tucked beneath what I thought were more intriguing destinations.
