I am a huge fan of zucchini bread. What better way to enjoy a vegetable, right? While I’ve also had apples in bread as well as carrots, I can’t say I’ve combined them all together before. Well, until yesterday.
We came across this recipe for Garden Harvest Cake in the April 2009 issue of Cooking Light. My mom and I (well more my mom than me) decided to give it a try. Since we didn’t change the recipe at all I will leave it as link for you to check out.
Although the recipe says it is a cake it has every characteristic of a quick bread. I always come across recipes that call for applesauce instead of oil and I’m never incredibly impressed with the results. However, as opposed to applesauce, this recipe uses a fresh Granny Smith apple to cut the amount of oil a bit and the results are fantastic! You will end up with a moist, tender bread full of cinnamon flavor with the slight crunch of toasted walnuts. A great breakfast for a hot summer morning.

That sounds really good! I’m not a big fan of nuts but I bet it would taste great with raisins or something in place of the nuts.

I bet it would be good with shredded winter squashes too. I wonder if grated sweet potatoes would work.
Never tried this before!!The closest I’ve come to eating veggies in bread was the “alu”(potato)stuffed bun and the spinach bread that we would get in bakery’s back in India.
That does look great! And so easy to sub in some gluten-free flour.
I love it! The name “Garden Harvest Cake” says it all. I’ve learned to sub applesauce only in certain baked goods but I didn’t realize that using a fresh apple would serve the same purpose of cutting down the fat with better texture and flavor. I’ll definitely have to try this out (considering I have a ton of zukes I still have to use up).

Erica – Sometimes adding too many makes it all fall apart, but that wasn’t the case with this. It turned out great!

Sweta – I often wonder if veggie sweet breads are a US thing. I don’t see them often except for here. Give it a try, they really turn out great.

Tangled Noodle – It was new to me too. I’m going to start experimenting with the apple as well. It dissolved in the bread so it would be really easy to add to a lot of different recipes w/o adding texture.
The combination of apples, carrots and zucchini in this bread sounds fantastic! Excellent recipe!

I like to combine apples and carrots in my fresh juices, so I imagine this is just delicious! And this is one of only two ways that I will eat zucchini.
